First of all, I would like to make it clear that this theory is not applicable to everyone, it varies person to person. If you are in a habit of having tea twice, thrice or more than that in a day, then morning tea at your workstation becomes mandatory for you for a smooth start of the day. It is helpful to boost up your mood to get back to work and enhances the working atmosphere.
Whether its a month of May or Dec, it hardly matters, you can’t avoid having tea, if you are regular tea taker. I found people sweating like anything but they prefer to have tea rather soft drink with the logic ” Garmi, Garmi Ko Marti Hai” Heat kills heat. Surprisingly, we nerve heard about ill health effect of tea on one’s health during summers.
Tea in the Middle East
I have spent almost 5 years in U.A.E and observed people’s passion for the tea. Easily one may find different types of tea stalls in U.A.E. Over there people have the choice of different kinds of tea like “Lipton tea” means Indian style tea with a variation of with milk or without milk, Indian Masala tea. “Sulaimani Chai” is also known as Kahva or lemon tea which is served everywhere in the middle east, Sulaimani chai is more or less like Kashmiri Kahwa Chai.
Traditional to modernization of tea in India
In India, tea is quite popular and people really enjoy it but with certain variations. Chemical compound and properties in tea are a very complex issue and usually, I don’t prefer to discuss it because somewhere it develops unnecessarily apprehensions which can mar your taste of tea. Now several chains of tea, cafes are found in big malls and reputed shopping markets in India likewise Starbucks.
Traditional Kashmir Tea or Kashmiri Pink Tea and Kahwa Chai
Noon Chai or Kashmiri pink tea is a traditional tea from Jammu and Kashmir. Its a part of their culture and they frequently take it in a day along with their local snacks. Kahwa-Kashmiri drink is equally popular there.
The word noon means salt. This term is used in villages and small towns of Northern India. My Grand Ma used to say noon instead of Namak or Salt. Still, people in villages prefer to use the word “noon”. Salt is the primary ingredient of “noon tea”.
Moreover from the health point of it is very good. Thus, in valley people have it twice or thrice in a day and they really enjoy it. Noon chai is traditionally prepared in a copper or aluminum pot. Noon chai is made of tea leaves, milk, salt and baking soda.
Directions to make Kahwa tea at home:
First of all boil two cups water and put Cloves, Cinamon and small or green cardamom along with tea leaves. Boil the mixture for minimum 10 to 12 minutes on sim flame.
Add saffron in it (after dissolving it in a 1/4 cup of lukewarm water so it can mix up well).
Once the tea is properly boiled then strain it and mix saffron solution along with almonds and fine pieces of dry coconut.
Put sugar or sugar-free according to your taste and serve hot to your guests.
